The Longboards concept was an idea that Todd wanted to build from early childhood. While growing up in Hawaii, he was exposed to all the great restaurants, the beautiful island landscapes and of course the world famous surf. I admit it took some convincing for me because I didn’t know much about island cuisine. After much convincing, including a few weeks in Hawaii sampling the local cuisine and hitting all the local beaches, we began the planning stages of our Longboards concept. Todd and I hit all the little surf shacks in search of the “best” plate lunches. I won’t mention everything we did in the name of research—but it has paid off!!!
